Preparation of chews

In a local dairy, the mix of cow and yak milk is boiled at a suitable temperature. Once, the solid mass is obtained and separated from the liquid, the chew sticks are wrapped and hung in a thin cloth to drain out the water.

To prepare a more harden form the chew sticks are wrapped in a jute bag and pressed hard to get rid of the water. After it dries, the sticks are hung over the fire to harden it further and give a smoky taste.

Consumption

Process of Manufacture

1. Checking
All the materials of Yak Milk, Cow Milk, Salt, and Lime Juice are quality checked and prepared.

2. Mixing
Yak Milk and Cow Milk are blended into cream sector machine to remove the fat of the milk.

3. Heat Treating
The blend of yak and cow milk is heat-treated at approximately 72°C (at least 15 seconds).

4. Defeating
Defeating is done with help using a manually operated centrifuge.

5. Cooling
Next filtering, washing in lukewarm water and solidifying the material is done, where adding salt and lime juice to solidifies the materials. Washing the materials a few times will remove the extra liquid part.

6. Dehydrating
It is a must to dehydrate the materials for about 5-6 hours targeting the moisture value down to 9.97 %.

7. Molding & Cutting
Next, the materials are cut into fine pieces of cake called Chhurpi.

8. Drying
We make sure that the Chhurpi is dried well, so we keep it in a warm place. Sun-drying for 3-4 days is preferred under no direct sunlight, rather keep it in a cozy place. Also, the Chhurpi’s are smoked for about 2 to 3 months which will provide some smoky flavor.

9. Packing
Finally, the best Chhurpi (Hard Cheese) are packed into Export Master Carton Box and ready for export.
